I’m trying to figure out how to remove the overlap between two lists to produce a new list that contains the unique values that are opposite the overlap. I’m able to find the overlap from the two lists, but I have no idea how to take that overlap and remove the values found from one list to then show the unique values that only exist in one of the lists.

You’re right in using the Find overlap step. To show values that do not share overlap between each table, set your rule to find values in one column that do not match the other column exactly.
Your resulting table should keep the structure of your Airtable import and show rows that do not share a value between those columns.
